Angel Food Cake
Light as air sponge cake made with egg whites. Low-fat and delicious!

- 1 cup cake flour
- 1 1/2 cups powdered sugar, divided
- 12 egg whites, room temperature
- 1 1/2 tsp cream of tartar
- 1/4 tsp salt
- 1 cup granulated sugar
- 1 1/2 tsp vanilla extract
- 1/2 tsp almond extract

Preheat oven to 325°F. Do not grease the tube pan.

Sift flour and 3/4 cup powdered sugar three times.

Beat egg whites until foamy.

Add cream of tartar and salt; beat to soft peaks.

Gradually add granulated sugar; beat to stiff peaks.

Beat in extracts.

Fold in flour mixture in three additions.

Spoon into ungreased tube pan.

Bake 40-45 minutes until golden.

Invert pan immediately; cool completely before removing.
