Almond Bear Claws

Danish pastry with almond filling shaped like bear paws.

  • 1 sheet puff pastry
  • 1 cup almond paste
  • 1/4 cup sugar
  • 1 egg
  • 1/4 tsp almond extract
  • 1 egg for wash
  • Sliced almonds
  • Powdered sugar

    Beat almond paste, sugar, egg, and extract.

    Roll pastry into rectangle; cut in half lengthwise.

    Spread filling down center of each.

    Fold over; seal edges.

    Cut into 4 pieces each.

    Make 4 cuts on one side to form claws.

    Brush with egg wash; top with almonds.

    Bake at 400°F for 18-20 minutes. Dust with sugar.

Baker's Tips

  • Fan the claws out slightly before baking
  • Almond paste and filling are different - use paste
