Fresh Blackberry Cupcakes

Tender vanilla cupcakes with fresh blackberries and blackberry buttercream.

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup milk
  • 1 cup fresh blackberries
  • For frosting: 1 cup butter, 4 cups powdered sugar, 1/4 cup blackberry puree

    Make vanilla cupcake batter.

    Gently fold in blackberries.

    Bake at 350°F for 20-22 minutes.

    Cool completely.

    Make puree: blend and strain blackberries.

    Beat butter; add sugar and puree.

    Pipe onto cupcakes; top with fresh berry.

  • Strain puree to remove seeds
  • Frozen berries work well too
