Blueberry Lemon Cupcakes

Bright lemon cupcakes bursting with blueberries and lemon cream cheese frosting.

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 2 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 cup milk
  • 1 cup fresh blueberries
  • For frosting: 8 oz cream cheese, 1/2 cup butter, 3 cups powdered sugar, 2 tbsp lemon zest

    Make lemon cupcake batter.

    Toss blueberries with 1 tbsp flour; fold in.

    Bake at 350°F for 18-20 minutes.

    Cool completely.

    Beat cream cheese and butter; add sugar and zest.
