Classic Carrot Cake

Moist, spiced carrot cake with cream cheese frosting and toasted walnuts.

  • 2 cups flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 4 eggs
  • 3 cups grated carrots
  • 1 cup chopped walnuts
  • For frosting: 8 oz cream cheese, 1/2 cup butter, 4 cups powdered sugar, 1 tsp vanilla

    Preheat oven to 350°F. Grease two 9-inch round pans.

    Beat oil, sugar, and eggs together.
