Carrot Cake Cupcakes

Spiced carrot cupcakes with cream cheese frosting and a sprinkle of chopped walnuts.

  • 2 cups flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 4 eggs
  • 3 cups grated carrots
  • 1 cup chopped walnuts
