Carrot Cake Cupcakes
Spiced carrot cupcakes with cream cheese frosting and a sprinkle of chopped walnuts.

- 1 1/2 cups vegetable oil
- 2 cups sugar
- 4 eggs
- 3 cups grated carrots
- 1 cup chopped walnuts
