Chocolate Mint Bars
Layered mint filling between chocolate cookie base and ganache topping.

- 1 cup butter, melted
- 2 cups sugar
- 4 eggs
- 1 cup cocoa
- 1 cup flour
- For mint: 4 cups powdered sugar, 1/2 cup butter, 3 tbsp cream, 1 tsp mint extract, green coloring
- For topping: 1 cup chocolate chips, 6 tbsp butter

Make brownie base with butter, sugar, eggs, cocoa, flour.

Bake at 350°F for 25 minutes. Cool.

Beat mint layer ingredients; spread on brownies.

Chill 30 minutes.

Melt chocolate and butter; spread on top.

Chill until set; cut into bars.
