French Chocolate Mousse
Light, airy chocolate mousse that melts on your tongue.

- 8 oz bittersweet chocolate
- 4 tbsp butter
- 4 eggs, separated
- 2 tbsp sugar
- 1 cup heavy cream
- Pinch of salt

Melt chocolate and butter; cool slightly.

Beat egg yolks; stir into chocolate.

Whip cream to soft peaks.

Beat egg whites with salt to soft peaks; add sugar.

Fold egg whites into chocolate.
