Chocolate Pots de Creme
Rich, dense French chocolate custard. More intense than mousse.

- 8 oz bittersweet chocolate
- 2 cups heavy cream
- 1/2 cup milk
- 5 egg yolks
- 1/4 cup sugar
- 1 tsp vanilla
- Pinch salt
- Whipped cream

Chop chocolate; place in bowl.

Heat cream and milk until simmering.

Whisk yolks, sugar, vanilla, salt.

Slowly add hot cream to yolks.

Strain over chocolate; stir until melted.

Pour into ramekins.

Bake in water bath at 300F for 25-30 minutes.

Chill 4 hours.
