Coconut Cream Pie
Creamy coconut custard topped with whipped cream and toasted coconut.

- 1 baked 9-inch pie crust
- 3/4 cup sugar
- 1/3 cup cornstarch
- 1/4 tsp salt
- 3 cups coconut milk
- 4 egg yolks
- 2 tbsp butter
- 1 tsp vanilla
- 1 cup sweetened shredded coconut
- 2 cups heavy cream
- 1/2 cup toasted coconut

Whisk sugar, cornstarch, salt, coconut milk, and yolks.

Cook over medium heat until thick.

Remove from heat; add butter, vanilla, and 1 cup coconut.

Pour into crust; chill 4 hours.
