Coconut Cupcakes

Tropical coconut cupcakes topped with coconut buttercream and toasted coconut flakes.

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup coconut milk
  • 1 tsp coconut extract
  • 1 cup shredded coconut

    Mix flour, baking powder, and salt.

    Cream butter and sugar; beat in eggs.

    Fold in dry ingredients and coconut.
