Coconut Layer Cake

Tender white cake with coconut cream filling and fluffy coconut frosting.

  • 2 1/2 cups flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter
  • 2 cups sugar
  • 5 egg whites
  • 1 cup coconut milk
  • 1 tsp vanilla
  • 1/2 tsp coconut extract
  • For frosting: 2 cups butter, 6 cups powdered sugar, 1/4 cup coconut cream, 3 cups sweetened coconut

    Make white cake batter with coconut milk.

    Bake in two round pans at 350°F for 28-32 minutes.

    Make frosting; add coconut extract.

    Fill and frost cake.
