Coconut Layer Cake
Tender white cake with coconut cream filling and fluffy coconut frosting.

- 2 1/2 cups flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup butter
- 2 cups sugar
- 5 egg whites
- 1 cup coconut milk
- 1 tsp vanilla
- 1/2 tsp coconut extract
- For frosting: 2 cups butter, 6 cups powdered sugar, 1/4 cup coconut cream, 3 cups sweetened coconut

Make white cake batter with coconut milk.

Bake in two round pans at 350°F for 28-32 minutes.
