Coconut Lime Cupcakes

Tropical coconut cupcakes with zesty lime buttercream frosting.

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 cup shredded coconut
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup coconut milk
  • 1 tsp coconut extract
  • For frosting: 1 cup butter, 4 cups powdered sugar, 3 tbsp lime juice, lime zest
  • Toasted coconut

    Mix flour, baking powder, coconut, salt.

    Cream butter and sugar; add eggs, coconut milk, extract.

    Bake at 350F for 18-20 minutes.

    Make lime buttercream with juice and zest.
