Classic Creme Brulee

Silky vanilla custard with a satisfying crackly caramelized sugar top.

  • 2 cups heavy cream
  • 1 vanilla bean (or 1 tsp extract)
  • 5 egg yolks
  • 1/2 cup sugar
  • Pinch of salt
  • 6 tbsp sugar for topping

    Heat cream with vanilla bean (scrape seeds) until simmering.

    Whisk egg yolks and sugar until pale.

    Slowly add hot cream to yolks, whisking constantly.

    Strain into ramekins.

    Bake in water bath at 325°F for 40-50 minutes until set.

    Chill 4 hours. Sprinkle sugar and torch until caramelized.

  • Torch just before serving
