Chocolate Eclairs
Elegant French pastries with vanilla cream filling and glossy chocolate glaze.

- 1/2 cup butter
- 1 cup flour
- 4 eggs
- 2 cups pastry cream
- 4 oz semi-sweet chocolate
- 2 tbsp butter
- 2 tbsp corn syrup

Boil water and butter; add flour and stir until ball forms.

Cool slightly; beat in eggs one at a time.

Pipe 4-inch strips onto baking sheet.

Bake at 400°F for 25-30 minutes until golden.

Fill with pastry cream.

Melt chocolate with butter and corn syrup; dip tops of eclairs.
