Espresso Cupcakes
Coffee-infused cupcakes with espresso buttercream for the coffee lover.

- 1 1/2 cups flour
- 1 1/2 tsp baking powder
- 2 tbsp instant espresso
- 1/4 tsp salt
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1/2 cup milk
- For frosting: 1 cup butter, 4 cups powdered sugar, 2 tbsp instant espresso dissolved in 1 tbsp hot water

Mix flour, baking powder, espresso, and salt.

Cream butter and sugar; add eggs and vanilla.

Alternate adding dry and milk.

Bake at 350°F for 18-20 minutes.

Pipe onto cooled cupcakes; dust with cocoa.
