Espresso Cupcakes

Coffee-infused cupcakes with espresso buttercream for the coffee lover.

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 2 tbsp instant espresso
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup milk
  • For frosting: 1 cup butter, 4 cups powdered sugar, 2 tbsp instant espresso dissolved in 1 tbsp hot water

    Mix flour, baking powder, espresso, and salt.

    Cream butter and sugar; add eggs and vanilla.

    Alternate adding dry and milk.

    Bake at 350°F for 18-20 minutes.

    Beat butter; add sugar and espresso mixture.

    Pipe onto cooled cupcakes; dust with cocoa.
