Fig and Walnut Bars
Spiced fig filling sandwiched between nutty shortbread layers. Rustic and elegant.

- For filling: 2 cups dried figs, 1/2 cup water, 1/4 cup honey, 1 tsp cinnamon, 1/2 tsp ginger
- For crust: 1 1/2 cups flour, 1/2 cup walnuts ground, 1/2 cup brown sugar, 1/2 tsp salt, 3/4 cup cold butter
- 1/2 cup walnuts chopped

Simmer figs with water, honey, and spices until soft; mash.

Make crust: mix flour, ground walnuts, sugar, salt; cut in butter.

Press 2/3 into 8x8 pan.

Spread fig filling.

Crumble rest with chopped walnuts on top.

Bake at 350F for 35-40 minutes.

- •Dried figs need to be soft - simmer longer if needed
