Fluffy Vanilla Cupcakes

Light, airy cupcakes with a dreamy vanilla buttercream frosting that melts in your mouth.

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk
  • For frosting: 1 cup butter, 4 cups powdered sugar, 2 tbsp milk, 1 tsp vanilla

    Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.

    Whisk together flour, baking powder, and salt in a bowl.

    Cream butter and sugar until light and fluffy, about 3-4 minutes.

    Add eggs one at a time, beating well after each. Mix in vanilla.

    Alternate adding flour mixture and milk, beginning and ending with flour.

    Fill cupcake liners 2/3 full and bake for 18-20 minutes.

    Cool completely before frosting.

    For frosting: beat butter until fluffy, gradually add powdered sugar, then milk and vanilla.

Baker's Tips

  • All ingredients should be at room temperature
  • Don't overmix the batter once flour is added
  • Use an ice cream scoop for even cupcakes
