French Silk Pie
Incredibly rich and mousse-like chocolate filling topped with fresh whipped cream.

- 1 baked pie crust
- 1 cup butter, softened
- 1 1/2 cups sugar
- 4 oz unsweetened chocolate, melted and cooled
- 2 tsp vanilla
- 4 pasteurized eggs
- 2 cups whipped cream
- Chocolate curls

Cream butter and sugar until very fluffy, 5 minutes.

Add cooled chocolate and vanilla.

Add eggs one at a time, beating 3 minutes after each.

Pour into cooled crust.

Refrigerate at least 4 hours.

Top with whipped cream and chocolate curls.
Baker's Tips
- •Use pasteurized eggs since filling isn't cooked
- •Beat very well after each egg for silky texture
