Rustic Stone Fruit Galette
Free-form pastry with summer stone fruit. Deliberately imperfect and gorgeous.

- 1 pie crust
- 3 cups sliced peaches or plums
- 1/3 cup sugar
- 1 tbsp cornstarch
- 1 tsp vanilla
- Egg wash
- Coarse sugar

Roll crust into rough circle.

Toss fruit with sugar, cornstarch, vanilla.

Pile fruit in center leaving 2-inch border.

Fold edges up over fruit, pleating as you go.

Brush crust with egg wash; sprinkle with sugar.

Bake at 400F for 30-35 minutes.
