Grasshopper Pie
Minty green chiffon filling in a chocolate cookie crust. Refreshingly delicious!

- 2 cups chocolate cookie crumbs
- 6 tbsp melted butter
- 1 tbsp gelatin
- 1/4 cup cold water
- 1/2 cup sugar
- 3 eggs, separated
- 1/4 cup creme de menthe
- 2 tbsp white creme de cacao
- 1 cup heavy cream
- Green food coloring

Mix crumbs and butter; press into pie plate. Chill.

Bloom gelatin in water.

Beat yolks with 1/4 cup sugar until thick.

Heat gelatin until dissolved; add to yolks.

Stir in liqueurs and food coloring.

Beat egg whites with remaining sugar.

Whip cream; fold both into gelatin mixture.

Pour into crust; chill 4 hours.

- •Use mint extract if you prefer non-alcoholic
