Hummingbird Cake

Southern banana-pineapple cake with cream cheese frosting and pecans.

  • 3 cups flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp salt
  • 3 eggs
  • 1 1/2 cups oil
  • 2 tsp vanilla
  • 1 can crushed pineapple
  • 2 cups mashed banana
  • 1 cup pecans
  • For frosting: 16 oz cream cheese, 1 cup butter, 6 cups powdered sugar

    Beat eggs, oil, and vanilla; add to dry.

    Fold in pineapple (with juice), bananas, and pecans.
