Italian Rainbow Cookies

Three-layered almond sponge cookies in red, white, and green with chocolate coating.

  • 8 oz almond paste
  • 1 cup butter
  • 1 cup sugar
  • 4 eggs, separated
  • 2 cups flour
  • Red and green food coloring
  • 1 cup apricot jam
  • 12 oz chocolate for coating

    Beat almond paste, butter, and sugar.

    Add yolks; mix in flour.

    Beat whites to stiff peaks; fold in.

    Divide into 3 parts; tint red, green, leave one plain.

    Bake each in sheet pan at 350F for 12 minutes.

    Layer with apricot jam between.

    Press; chill overnight.

    Coat top and bottom with chocolate.

    Slice into small rectangles.
