Mini Fruit Tarts

Buttery tartlet shells with pastry cream and fresh fruit. Elegant individual desserts.

  • For shells: 1 1/2 cups flour, 1/2 cup butter, 1/4 cup sugar, 1 egg yolk
  • For cream: 2 cups milk, 4 egg yolks, 1/2 cup sugar, 1/4 cup cornstarch, 2 tsp vanilla
  • Fresh fruit
  • Apricot glaze

    Make tart dough; press into mini tart pans.

    Bake at 350F for 12-15 minutes.

    Make pastry cream; cool.

    Fill shells with cream.

    Top with fruit in patterns.

    Brush with warm apricot glaze.
