Mint Chocolate Cupcakes

Chocolate cupcakes with refreshing mint buttercream. A cool and chocolatey treat!

  • 1 cup flour
  • 1 cup sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup buttermilk
  • 1/2 cup hot water
  • 1/4 cup oil
  • For frosting: 1 cup butter, 4 cups powdered sugar, 1 tsp mint extract, green food coloring

    Mix dry ingredients in a bowl.

    Add egg, buttermilk, water, and oil; beat well.

    Fill liners 2/3 full.

    Bake at 350°F for 18-20 minutes.

    For frosting: beat butter, add sugar, mint extract, and coloring.

    Frost cooled cupcakes.
