Mint Chocolate Cupcakes
Chocolate cupcakes with refreshing mint buttercream. A cool and chocolatey treat!

- 1 cup flour
- 1 cup sugar
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1/2 cup buttermilk
- 1/2 cup hot water
- 1/4 cup oil
- For frosting: 1 cup butter, 4 cups powdered sugar, 1 tsp mint extract, green food coloring

Mix dry ingredients in a bowl.

Add egg, buttermilk, water, and oil; beat well.

Fill liners 2/3 full.

Bake at 350°F for 18-20 minutes.

For frosting: beat butter, add sugar, mint extract, and coloring.
