Vanilla Panna Cotta

Silky Italian custard with a delicate wobble, served with fresh berry compote.

  • 2 1/2 tsp gelatin
  • 3 tbsp cold water
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • Fresh berries for serving

    Sprinkle gelatin over cold water; let bloom 5 minutes.

    Heat cream, milk, and sugar until sugar dissolves.

    Remove from heat; stir in gelatin until dissolved.

    Add vanilla; pour into ramekins.

    Refrigerate at least 4 hours until set.
