Pavlova with Fresh Berries

Crisp meringue shell with soft marshmallow center topped with cream and fruit.

  • 4 egg whites
  • 1 cup superfine sugar
  • 1 tsp vanilla
  • 1 tsp white vinegar
  • 2 tsp cornstarch
  • 2 cups heavy cream
  • 3 cups mixed fresh berries

    Beat egg whites to soft peaks.

    Gradually add sugar; beat until stiff and glossy.

    Fold in vanilla, vinegar, and cornstarch.

    Shape into 9-inch round on parchment.

    Bake at 250°F for 90 minutes.

    Turn off oven; leave inside until cool.
