Pineapple Upside-Down Cake
Retro classic with caramelized pineapple rings and cherries on a buttery brown sugar base.

- 1 cup packed brown sugar
- 1 can pineapple rings, drained
- Maraschino cherries
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/2 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1/2 cup pineapple juice

Preheat oven to 350°F.

Melt 1/4 cup butter in a 10-inch cast iron skillet.

Sprinkle brown sugar evenly over butter.

Arrange pineapple rings in pan; place cherries in centers.

Make cake batter: cream butter and sugar, add eggs and vanilla.
