Pistachio Cupcakes

Nutty green pistachio cupcakes with pistachio cream cheese frosting.

  • 1 1/4 cups flour
  • 1/2 cup pistachio flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/2 tsp almond extract
  • For frosting: 8 oz cream cheese, 1/2 cup butter, 3 cups powdered sugar, 1/4 cup pistachio paste
  • Chopped pistachios

    Mix flours, baking powder, salt.

    Cream butter and sugar; add eggs and extract.

    Alternate dry and milk.

    Bake at 350F for 18-20 minutes.

    Make pistachio cream cheese frosting.

    Pipe and top with chopped pistachios.

Baker's Tips

  • Grind pistachios fine for pistachio flour
  • Natural green color comes from the nuts
