Homemade Pita Bread

Puffy pita pockets that actually puff up. Warm from the oven is best.

  • 3 cups flour
  • 1 1/2 tsp yeast
  • 1 tsp sugar
  • 1 1/2 tsp salt
  • 1 cup warm water
  • 2 tbsp olive oil

    Mix all ingredients; knead 8 minutes.

    Rise 1 hour.

    Divide into 8 balls.

    Roll into 6-inch rounds.

    Rest 15 minutes.

    Bake on hot baking stone at 500F for 3-4 minutes.

    They should puff up like balloons.

Baker's Tips

  • Very high heat is the secret to the puff
  • Don't roll too thin or they won't pocket
