Portuguese Custard Tarts

Flaky pastry cups with burnt caramelized custard. The famous Pasteis de Nata.

  • 1 sheet puff pastry
  • 1 cup milk
  • 1/2 cup sugar
  • 3 tbsp flour
  • 4 egg yolks
  • 1 tsp vanilla
  • 1 strip lemon peel
  • Cinnamon stick

    Heat milk with lemon peel and cinnamon; strain.

    Whisk sugar, flour, yolks.

  3. 3

    Slowly add hot milk to yolks.

    Roll pastry tightly; slice into rounds.

    Press into muffin tin.

    Fill 3/4 with custard.

    Bake at 500F for 12-15 minutes until charred spots appear.

Baker's Tips

  • Very high heat creates the signature char marks
  • Best eaten within hours of baking
