Raspberry Fool

Crushed raspberries folded into billowy whipped cream. British simplicity at its best.

  • 2 cups fresh raspberries
  • 1/4 cup sugar
  • 2 cups heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla
  • Shortbread cookies for serving

    Mash half the raspberries with sugar.

    Whip cream with powdered sugar and vanilla to soft peaks.

    Fold raspberry mash into cream, leaving streaks.

    Fold in remaining whole berries.

    Spoon into glasses.
