Strawberry Rhubarb Crumble Pie
Sweet strawberries and tart rhubarb with a brown sugar crumble top.

- 1 pie crust
- 3 cups rhubarb, sliced
- 2 cups strawberries, sliced
- 1 cup sugar
- 3 tbsp cornstarch
- For crumble: 3/4 cup flour, 1/2 cup brown sugar, 1/2 cup oats, 1/2 cup cold butter

Toss rhubarb and berries with sugar and cornstarch.

Pour into crust.

Make crumble: mix flour, sugar, oats; cut in butter.

Pile crumble on top.

Bake at 400F for 20 min, then 350F for 35 min.

Cool 2 hours before cutting.
