Sfogliatelle

Crispy layered Italian pastry with sweet ricotta filling. A Naples classic.

  • 3 cups flour
  • 1 tsp salt
  • 1 cup warm water
  • For filling: 1 cup ricotta, 1/2 cup sugar, 1 egg, 1/2 cup semolina cooked in milk, 1 tsp vanilla, 1/4 cup candied orange peel
  • 1 cup lard or butter

    Make stiff dough with flour, salt, water; rest 1 hour.

    Roll paper thin; brush with fat.

    Roll into tight log.

    Slice into rounds; shape into cones.

    Fill with ricotta mixture.

    Seal edges.

    Bake at 400F for 20-25 minutes until deeply golden.

  • The dough must be stretched very thin
