Crispy layered Italian pastry with sweet ricotta filling. A Naples classic.

- 3 cups flour
- 1 tsp salt
- 1 cup warm water
- For filling: 1 cup ricotta, 1/2 cup sugar, 1 egg, 1/2 cup semolina cooked in milk, 1 tsp vanilla, 1/4 cup candied orange peel

Make stiff dough with flour, salt, water; rest 1 hour.

Roll paper thin; brush with fat.

Roll into tight log.

Slice into rounds; shape into cones.

Fill with ricotta mixture.

Bake at 400F for 20-25 minutes until deeply golden.
