Simple Lemon Bars

Tangy, sweet, and utterly delicious lemon bars with a buttery shortbread crust.

  • For crust: 1 cup butter, 1/2 cup powdered sugar, 2 cups flour
  • For filling: 4 large eggs
  • 2 cups granulated sugar
  • 1/3 cup all-purpose flour
  • 2/3 cup fresh lemon juice
  • Zest of 2 lemons
  • Powdered sugar for dusting

    Preheat oven to 350°F (175°C). Line a 9x13 inch pan with parchment paper.

    For crust: Mix butter, powdered sugar, and flour until crumbly. Press into pan.

    Meanwhile, whisk eggs, sugar, flour, lemon juice, and zest until smooth.
