Fresh Strawberry Tart

Buttery tart shell filled with pastry cream and topped with fresh strawberries.

  • 1 1/4 cups flour
  • 1/2 cup powdered sugar
  • 1/2 cup cold butter
  • 1 egg yolk
  • For pastry cream: 2 cups milk, 1/2 cup sugar, 3 egg yolks, 1/4 cup cornstarch, 2 tbsp butter, 1 tsp vanilla
  • 2 lbs fresh strawberries
  • 1/2 cup apricot jam for glaze

    Make tart dough: pulse flour, sugar, butter until crumbly; add yolk.

    Press into tart pan; chill 30 minutes.

    Bake at 375°F for 20-25 minutes until golden. Cool.

    Make pastry cream: Heat milk. Whisk sugar, yolks, cornstarch.

    Temper yolk mixture with hot milk; return to heat and cook until thick.

    Stir in butter and vanilla. Cool completely.

    Fill tart shell with pastry cream.

    Arrange strawberries on top.

    Heat jam; brush over strawberries for shine.

Baker's Tips

  • Hull strawberries and arrange cut-side down
  • Glaze just before serving for best appearance
